The first time I drove out to Sri Radha Mohan Dairy Farm in Gonda, I thought I was going to inspect a supplier. I came home realising I was the one with things to learn. This is the farm where PYAAS actually began, and almost everything I believe about honest dairy I picked up standing in farmer Ram's shed.
The farm where PYAAS began
Sri Radha Mohan Dairy Farm sits in Gonda district, Uttar Pradesh. It is Ram's farm — a herd of 76 cows, Holstein Friesian and Sahiwal, pouring around 575 litres of milk into our chain on a good day. The small-batch A2 Bilona ghee that PYAAS ships across India today comes from this milk. So when I say Know Your Milk, this is the farm I have in my head. Not a stock photo of a cow. Ram, his sheds, his animals.
Good dairy is mostly boring, and that is the point
I arrived expecting some secret — a special feed, a clever trick. There isn't one. What Ram runs is discipline, repeated every single day. The cows are milked at the same hours. The sheds are cleaned before I would have thought to clean them. The animals are calm because nothing in their day is a surprise, and calm cows give better milk.
I used to believe quality was something you checked for at the end, with a test. Ram taught me it is something you protect from the very start. By the time milk reaches any check, the quality has already been won or lost on the farm.
What actually makes the milk good
Watching Ram work, I started to see the handful of things that quietly decide everything:
- Routine. Same milking times, same handling, so the herd is never stressed.
- Clean before contact. Equipment and udders are clean before anything touches the milk, not after.
- Knowing each cow. Ram reads his animals one by one — who is off her feed, who is coming into season — instead of treating the herd as one blur.
- Speed and cold. The faster milk is cooled after milking, the less can go wrong; on a good farm the cold chain starts in the first hour.
The herd, and where A2 fits
People sometimes ask me to make A2 sound more magical than it is, and I won't. The herd at Sri Radha Mohan Dairy Farm is Holstein Friesian and Sahiwal. Our A2 milk comes from the A2 cows within that herd — it is a real property of specific animals, not a label we stamp on a tank. Being honest about that is the whole job. If I inflate it, I have already broken the one promise the brand is built on.
That same honesty is why the ghee matters to me. Our A2 Bilona ghee is made slowly, the traditional way, from this cow milk — and because I know the farm it started on, I can stand behind every jar. The ghee is not a separate product to me; it is Ram's milk, carried a little further.
Why we keep it single-origin
The easy path in dairy is to pool milk from thousands of farms until no one can say where a single litre came from. We went the harder way on purpose. Single-origin is also fairer to the farmer. When milk is pooled and anonymous, the person who did the work disappears into an average price. When it stays named, Ram's care is visible, and a farmer who is paid properly for quality has every reason to keep protecting it. Good dairy and fair dairy, it turns out, are the same thing.
What comes next
The ghee from this milk already ships across India. Fresh A2 cow milk is the next step: PYAAS milk launches in Lucknow from August 2026 and will expand across Uttar Pradesh from there.
