
How to Make Paneer at Home from Fresh Cow Milk

Shop paneer is convenient, but nothing matches the soft, milky paneer you make yourself, and it is genuinely one of the easiest things to make from scratch. It also happens to be the best test of your milk, because good paneer needs good milk. Here is how to do it.
What you need
- 1 litre fresh full cream cow milk (richer milk, softer paneer).
- An acid: 2 to 3 tablespoons of lemon juice, white vinegar, or a few spoons of curd.
- A clean muslin cloth and a strainer.
Step by step
- Boil the milk. Bring it to a gentle boil, stirring so it does not catch at the bottom.
- Lower the heat and add acid slowly. Pour in the lemon juice or vinegar a little at a time, stirring gently. The milk will split into white curds and pale green whey.
- Stop as soon as it separates. Once the whey looks clear, switch off the heat. Over-acidifying makes rubbery paneer.
- Strain. Pour through muslin, then rinse the curds with a little cold water to remove the sour edge.
- Press. Gather the cloth, squeeze out excess whey, then place a weight on top for 30 to 60 minutes. Longer pressing gives firmer paneer.
That is it. Cut into cubes and use within a day or two, kept refrigerated.
