How to Set Perfect Curd (Dahi) at Home

Every household has an opinion about dahi. Too sour, too thin, never like the old days. The truth is that perfect curd is not luck, it is a few controllable things done right. Master them and you will set thick, creamy dahi every time.

The four things that matter

1. The milk

Curd is only as good as the milk it starts from. Full cream cow or buffalo milk sets thicker and creamier because of its fat and solids. Boil the milk first, and if you want an extra-firm set, let it simmer a few minutes to reduce slightly. See full cream milk benefits.

2. The temperature

This is where most curd goes wrong. The milk should be warm, not hot, when you add the starter, about the temperature you can comfortably keep a finger in. Too hot kills the culture, too cold and it will not set.

3. The starter

Add a spoon or two of fresh, good-quality curd as your starter and whisk it in gently and evenly. Old or sour starter gives sour curd, so refresh it regularly.

4. The rest

Pour into a bowl, cover, and leave it undisturbed in a warm spot for 4 to 8 hours. Do not move it or peek, movement breaks the set. In cold weather, use a switched-off oven or wrap the bowl to hold warmth.

Common mistakes

  • Adding starter to milk that is too hot, kills the culture.
  • Setting in a cold room, leaves it runny.
  • Using thin or diluted milk, no body to the curd.
  • Disturbing it mid-set, breaks the structure and releases water.

Once it sets
