Every dairy in India lives and dies by two numbers. SNF and FAT. They appear on lab reports, they set the price farmers are paid, and they are the closest thing milk has to a report card. Yet almost no consumer knows what they mean. Let us fix that.
FAT: the richness number
FAT is exactly what it sounds like, the percentage of fat in the milk. It carries a lot of the flavour, the creaminess and the fat-soluble vitamins like A and D.
- Cow milk typically runs about 3.5 to 4.5 percent fat.
- Buffalo milk is richer, often 6 percent or more, which is why it tastes heavier.
Higher is not automatically better, it depends on what you want, but a fat figure well below the normal range can be a sign milk has been watered down.
SNF: the quality number
SNF stands for Solids-Not-Fat. It is everything solid in milk apart from the fat, the proteins, the lactose, the vitamins and the minerals. If FAT is the richness, SNF is much of the nutrition.
- Cow milk SNF is commonly around 8.5 percent or higher.
- A low SNF often points to dilution or poor-quality milk.
Because water lowers both numbers, SNF and FAT together are one of the first things a lab looks at to catch adulteration.
